The states of India need to be highlighted for how diverse they are. Rasika truly believes that South Indian and Tamil cuisine deserve a bigger, more global platform.

Reinvention of heritage cuisines should never be frowned upon, and rather celebrated as long as constant respect is given to the traditional flavors, ingredients, cooking methods and health benefits. To have a platform for countless other South Indian chefs in the future.

To prove how diverse India is as a country and that it deserves a global representation and it can compete with the likes of the French, Italian and Japanese cuisines on an International level.
